With over 13 years of experience at J. Gilbert’s, Dorna Palani brings a deep passion for hospitality and an unmatched dedication to creating exceptional guest experiences. Beginning her journey as a host, Dorna quickly rose through the ranks to Assistant General Manager before finding her calling in sales and event planning—where she has flourished for the past 12 years.

In 2024, Dorna was recognized as Sales & Events Manager of the Year, a testament to her commitment to excellence and the unforgettable experiences she consistently delivers.

Dorna has curated unforgettable events for a wide range of clients, including professional athletes, high-profile guests, celebrities, and even royalty. Her true talent lies in understanding a client’s vision and transforming it into a seamless, memorable celebration. From intimate gatherings to large-scale occasions, Dorna specializes in personalized service, thoughtful details, and flawless execution

She is known for her eye for design and exceptional décor skills, along with a refined touch in menu creation, wine pairings, and signature cocktail design. Her stunning charcuterie boards and food displays are show-stoppers in their own right. Dorna also leads the planning and execution of catered events, wine dinners, and exclusive experiences hosted by J. Gilbert’s.

Dustin Starling

Executive Chef

For Executive Chef Dustin Starling, the heart of great cooking lies in tradition, technique, and the ability to elevate humble ingredients with passion and purpose. Born with deep culinary roots in North Carolina, Dustin draws inspiration from defining family influences that continue to shape his cooking today. His grandmother’s soulful Southern dishes — steeped in the flavors of the Piedmont and tobacco country — introduced him to the art of Southern hospitality and refined comfort food. Her natural use of classic French techniques, often without formal recognition, instilled in him an early appreciation for craftsmanship and grace in the kitchen. 

While Dustin began his studies in turf and golf course management, his true calling emerged in restaurant kitchens. Working in fine dining and steakhouses while attending college, he quickly realized his passion for the culinary arts and pursued it full time. He honed his craft in the upper Midwest where he was deeply influenced by chefs and mentors connected to the Charlie Trotter lineage.  

Since moving to the D.C. area in 2015, Dustin has continued to refine his leadership and culinary vision, bringing his passion for elevated steakhouse cuisine and modern comfort to every plate at J. Gilbert’s. 

Chef Dustin’s leadership philosophy is grounded in fairness, empathy, and culinary excellence. He believes in fostering innovation and discipline while nurturing the growth of those around him — building strong, cohesive teams that share his commitment to quality and creativity.
